Fresh Water River Perch has a mild flavor and a moist, medium-firm texture. The big fillets and meaty texture will remind you of grouper or Sea Bass. Raw fillets have a pinkish, flesh-toned tint to them. But, when smoked with maple, they take on a candy-coating glaze that will remind you of bacon but with the texture of a hard country ham. Treat yourself to this, and you will see why we sell out of it at our small batch smoked house every weekend.
